Sponge cake
Ingredients
- 1000 g.
- Roller Planchas Calados
- 900 g.
- Eggs
Elaboration
Mixer with glove. Beat all ingredients at room temperature for 8 minutes at full speed. Spread out on baking tray. Oven temperature: 270ºC Baking time: 4 min. Vent closed.
Cheese mousse
Ingredients
- 600 g.
- Trebon Quark
- 1000 g.
- Water 28ºC
- 1000 g.
- White Cream
Elaboration
Mix Trebon Quark with water. Combine with the cream slightly whipped.
Assembly and finishing
1.At the bottom of the frame, place the sponge cake layer base, then fill it with Trebon Quark cheese mousse.
2.Freeze.
3.Finish with Moorea Frambuesa mixed by 50% with Springel Neutral.
4.Decorate as desired.
